Queen's Quick Blueberry Galette

When you need a quick dessert with wonderful flavor, you can’t miss with this Blueberry Galette. Guests will think you fussed, but this easy dessert is easier than pie!

RECIPE:

1 single recipe of Perfect Buttery Pie Crust Recipe

3 cups fresh or frozen blueberries

zest of one lemon, plus a good squeeze of juice

3/4 cups sugar

1/2 teaspoon ground cinnamon

1-1/2 Tablespoons corn starch

Roll out the pie crust dough into a 14” circle. Place into a 9” pie dish, with the edges extending past the dish.

Combine the remaining ingredients and pour into the pie crust. Fold the extended crust in over the filing, crimping it slightly.

Streusel Topping:

3/4 cup unbleached all purpose flour

1/2 cup (packed) golden brown sugar

1/4 cup sugar

1/2 teaspoon ground cinnamon

1/2 teaspoon salt

1/4 teaspoon ground allspice

7 Tablespoons chilled unsalted butter, slightly melted

1/2 cup old-fashioned oats

Combine these ingredients, and spoon entire amount into the center of the pie dish, keeping the crimped edge of the crust dough perky and surrounding the streusel.

Bake in a preheated 400 oven, for 15 minutes. Reduce heat to 325 and bake an additional 20-25 minutes until the filling oozes and bubbles.
