White Blast Chewy Cookies
Ingredients
2 sticks unsalted butter, room temperature
1 cup packed dark brown sugar
1 large egg
1 teaspoon vanilla extract
1 teaspoon almond extract
1/4 cup milk
1/2 teaspoon salt
1 teaspoon baking soda
2 cups old fashioned oats
2 cups all-purpose flour
1 cup sweetened shredded coconut
7 ounces of white chocolate chips
1/2 cup chopped macadamia nuts
Directions
Preheat the oven to 350 degrees.
In the bowl of a standing mixer, beat the butter, and sugar until fluffy. Beat in the egg, extracts and milk until smooth. Continue mixing and add the salt and baking soda.
Blend in the flour, oatmeal and coconut to the butter mixture until thoroughly combined. Stir in the white chocolate and nuts.
Scoop the dough with a 2-ounce ice cream scoop on to a baking sheet, placing the dough balls 2-1/2 inches apart.
Bake for 14-15 minutes or until the cookies are golden and puffy. Transfer the baked cookies to a wire rack to cool. These cookies should be stored in an airtight container.
Makes 17-18 cookies.
